Haagse Bluf (Bluff from The Hague)
Share

What in the world is that supposed to be? Bluff as a food? It'll make sense, you'll see. This dessert is made mostly of whipped egg whites, so it seems like a lot, but it's not.
Traditionally, The Hague (where I'm from originally) was seen as an uppity city. It was the royal seat, after all (and still is), so most noble families owned a house there. Obviously, that attracted a certain amount of not-so-noble folk who still felt they belonged there. Now, the Dutch have a saying: Act normal, that's crazy enough. So even real nobles shouldn't feel they're above you. I'm very, very Dutch that way.
For a dessert that's a bit of hot air so to speak, I feel this name is quite apt.
Ingredients:
2 egg whites
175 ml berry juice
75 g sugar (or more, to taste)
Steps:
Just one step, really: put it all in a bowl and whisk until stiff.
If you want to be traditional about it, you add a biscuit to the small bowl in which you will serve this. It's supposed to be a mariakaakje, but a rich tea biscuit will do. Simple, but yum!
